Instructions
Preheat oven to 400°F (200°C). Place beef bones on a baking sheet and roast for 30 minutes to enhance flavor.
Transfer roasted bones to a large stockpot or slow cooker. Add chopped vegetables, apple cider vinegar, and bay leaves.
Pour in enough water to fully cover the bones. Bring to a boil, then reduce heat to a low simmer.
Simmer uncovered for 12-24 hours, skimming off any foam that rises to the top.
Strain broth through a fine mesh sieve or cheesecloth, discarding solids.
Season with salt and pepper to taste. Allow to cool and store in glass jars or containers.
Notes
Use as a soup base, sip as a warm beverage, or incorporate into stews. Store in the refrigerator for up to 5 days or freeze for up to 3 months.
