Ingredients
  

Base Ingredients

  • 2 lbs chicken bones from a whole chicken, including feet and necks
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 1 onion quartered
  • 4 cloves garlic crushed
  • 2 tbsp apple cider vinegar to extract nutrients from bones
  • 1 tsp salt adjust to taste
  • 10 cups water filtered

Optional Herbs and Spices

  • 1 tsp black peppercorns
  • 2 sprigs thyme
  • 1 tsp turmeric for anti-inflammatory benefits

Instructions
 

  • Place chicken bones, carrots, celery, onion, and garlic into a large stockpot or slow cooker.
  • Add apple cider vinegar and filtered water, making sure bones are fully submerged.
  • Let the mixture sit for 20 minutes before heating to help extract minerals from the bones.
  • Turn the heat to low and bring to a gentle simmer. Do not let it boil.
  • Simmer uncovered for 12 to 24 hours, skimming off any foam that forms on the surface.
  • After cooking, remove solids using a fine mesh strainer or cheesecloth.
  • Let broth cool slightly before transferring to storage containers.
  • Store in the refrigerator for up to 5 days or freeze for up to 6 months.

Notes

For the best flavor, roast the bones in the oven at 400°F (200°C) for 20 minutes before simmering.
