Instructions
Place chicken bones, carrots, celery, onion, and garlic into a large stockpot or slow cooker.
Add apple cider vinegar and filtered water, making sure bones are fully submerged.
Let the mixture sit for 20 minutes before heating to help extract minerals from the bones.
Turn the heat to low and bring to a gentle simmer. Do not let it boil.
Simmer uncovered for 12 to 24 hours, skimming off any foam that forms on the surface.
After cooking, remove solids using a fine mesh strainer or cheesecloth.
Let broth cool slightly before transferring to storage containers.
Store in the refrigerator for up to 5 days or freeze for up to 6 months.
Notes
For the best flavor, roast the bones in the oven at 400°F (200°C) for 20 minutes before simmering.
