Boiled Potatoes

washed and peeled

water
for boiling

Instructions
Fill a medium pot with 4 cups of water and bring to a boil.
Add the potatoes and a pinch of salt (optional).
Let the potatoes boil for 15 minutes or until they are soft when pierced with a fork.
Drain the potatoes and let them cool slightly.
Drizzle with olive oil and sprinkle chopped parsley before serving.
Notes
Boiled potatoes are gentle on the stomach and an excellent source of energy after fasting. Avoid butter or heavy seasonings for a lighter meal.
