Simple Potato Roast

  • 4 medium potatoes peeled and diced
  • 2 tbsp ghee or fasting-friendly oil
  • 1 tsp cumin seeds
  • 1 tsp rock salt (sendha namak)
  • 1 tsp black pepper or red chili powder optional
  • fresh coriander for garnish

Instructions
 

  • Heat ghee or oil in a pan over medium heat.
  • Add cumin seeds and let them crackle.
  • Add diced potatoes and stir well to coat them in the oil.
  • Season with rock salt and black pepper or chili powder if using.
  • Cover and cook on low heat, stirring occasionally, until the potatoes are golden and crispy.
  • Garnish with fresh coriander before serving.

Notes

You can enhance the flavor by adding roasted peanuts for crunch or a dash of lemon juice for tanginess.
