Simple Potato Roast

cumin seeds

rock salt (sendha namak)

black pepper or red chili powder

fresh coriander

Instructions
Heat ghee or oil in a pan over medium heat.
Add cumin seeds and let them crackle.
Add diced potatoes and stir well to coat them in the oil.
Season with rock salt and black pepper or chili powder if using.
Cover and cook on low heat, stirring occasionally, until the potatoes are golden and crispy.
Garnish with fresh coriander before serving.
Notes
You can enhance the flavor by adding roasted peanuts for crunch or a dash of lemon juice for tanginess.
