Ingredients
  

Pâte Brisée (Pie Crust)

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter chilled and cubed
  • 1/4 tsp salt
  • 4-5 tbsp ice water

Apple Filling

  • 4 apples Granny Smith or Honeycrisp, peeled and sliced
  • 1/2 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tbsp lemon juice
  • 1 tbsp all-purpose flour

Optional Toppings

  • 2 tbsp apricot preserves for glazing
  • 1 egg beaten, for egg wash
  • 1 tbsp granulated sugar for sprinkling

Instructions
 

  • Prepare the Dough: In a mixing bowl, combine flour and salt. Add chilled butter and mix until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Form into a disk, wrap in plastic, and refrigerate for at least 30 minutes.
  • Prepare the Filling: In a bowl, combine sliced apples, brown sugar, cinnamon, nutmeg, lemon juice, and flour. Toss to coat evenly. Set aside.
  • Assemble the Pie: Preheat the oven to 375°F (190°C). On a floured surface, roll out the dough into a 12-inch circle. Transfer to a parchment-lined baking sheet. Arrange the apple mixture in the center, leaving a 2-inch border. Fold the edges over the filling, pleating as necessary.
  • Apply Egg Wash: Brush the crust with beaten egg and sprinkle with granulated sugar.
  • Bake: Bake for 45 minutes or until the crust is golden and the apples are tender.
  • Glaze (Optional): Warm apricot preserves and brush over the apples for a glossy finish.
  • Cool: Allow the pie to cool for at least 1 hour before serving.

Notes
