Homemade Pistachio Wedding Cookies

Ingredients
  

  • 1 cup unsalted butter softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 3/4 cup ground pistachios
  • 1/2 cup chopped pistachios
  • 1/4 tsp salt
  • 1 cup powdered sugar (for coating)

Instructions
 

  • In a large mixing bowl, beat the butter and powdered sugar until light and fluffy.
  • Add the vanilla extract and mix well.
  • Gradually add the flour, ground pistachios, and salt, mixing until a dough forms.
  • Roll the dough into small balls, about 1 inch in diameter.
  • Place the balls on a baking sheet lined with parchment paper, spacing them slightly apart.
  • Bake at 350°F (175°C) for 12-15 minutes, until the cookies are set but not browned.
  • Allow the cookies to cool for 5 minutes, then roll them in powdered sugar while still warm.
  • Once completely cool, roll them in powdered sugar again for a perfect snowy finish.

Notes

For a firmer texture, chill the dough for 30 minutes before baking. Store cookies in an airtight container at room temperature for up to 1 week, or freeze for up to 3 months.
