Peanut Butter Protein Cookies

Ingredients
  

Main Ingredients

  • 1 cup natural peanut butter unsweetened, creamy or crunchy
  • 1/2 cup vanilla or chocolate protein powder use a high-quality whey or plant-based protein
  • 1/3 cup honey or maple syrup for natural sweetness
  • 1 egg large
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt optional, if peanut butter is unsalted

Optional Add-ins

  • 1/4 cup dark chocolate chips or cacao nibs
  • 1/4 cup chopped nuts almonds or walnuts for extra crunch

Instructions
 

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a mixing bowl, whisk together peanut butter, protein powder, honey, egg, vanilla extract, baking soda, and salt until smooth.
  • Fold in chocolate chips and chopped nuts, if using.
  • Scoop tablespoon-sized portions onto the prepared baking sheet. Flatten slightly with a fork to create a crisscross pattern.
  • Bake for 10-12 minutes, or until the edges are lightly golden. Let cool on the pan for 5 minutes before transferring to a wire rack.

Notes

For a vegan version, replace the egg with a flax egg (1 tbsp flaxseed meal + 3 tbsp water). Store cookies in an airtight container for up to a week.
