vanilla or chocolate protein powder
use a high-quality whey or plant-based protein

honey or maple syrup

Instructions
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a mixing bowl, whisk together peanut butter, protein powder, honey, egg, vanilla extract, baking soda, and salt until smooth.
Fold in chocolate chips and chopped nuts, if using.
Scoop tablespoon-sized portions onto the prepared baking sheet. Flatten slightly with a fork to create a crisscross pattern.
Bake for 10-12 minutes, or until the edges are lightly golden. Let cool on the pan for 5 minutes before transferring to a wire rack.
Notes
For a vegan version, replace the egg with a flax egg (1 tbsp flaxseed meal + 3 tbsp water). Store cookies in an airtight container for up to a week.
