  • 1 ½ pounds beef stew meat cut into bite-sized pieces
  • 1 pound baby potatoes halved
  • 4 tbsp unsalted butter melted
  • 3 cloves garlic minced
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • ½ tsp dried thyme
  • ½ tsp dried rosemary
  • ½ tsp salt or to taste
  • ¼ tsp black pepper
  • ¼ cup beef broth
  • 1 tbsp olive oil

Instructions
 

  • Season the beef chunks with salt, pepper, and smoked paprika.
  • Sear the beef in a hot skillet with olive oil for 2-3 minutes on each side for extra flavor.
  • Place the baby potatoes at the bottom of the slow cooker, then add the seared beef on top.
  • In a small bowl, mix melted butter, garlic, onion powder, smoked paprika, thyme, and rosemary. Pour this mixture over the beef and potatoes.
  • Pour in the beef broth for added moisture and flavor.
  • Set the slow cooker on LOW for 6-8 hours or HIGH for 3-4 hours. Avoid opening the lid too often to retain flavors.
  • Garnish with fresh herbs and serve warm with a side of crusty bread or rice.

Notes

For variety, swap beef with chicken thighs or pork shoulder. Add carrots, mushrooms, or green beans for extra nutrients. For an Instant Pot version, use the Sauté function to brown the beef, then pressure cook on high for 35 minutes with a natural release.
