Ingredients
  

Dry Ingredients

  • 2 cups self-rising flour or 2 cups all-purpose flour + 3 tsp baking powder + ½ tsp salt
  • 1 cup white sugar
  • 1 cup brown sugar light or dark

Wet Ingredients

  • 1 cup vegetable oil or melted butter for a richer flavor
  • 4 eggs large
  • 1 tsp vanilla extract

Add-ins

  • 2 cups pecans finely chopped, toasted for extra flavor

Instructions
 

  • Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper.
  • In a large mixing bowl, whisk together the white sugar, brown sugar, eggs, vegetable oil, and vanilla extract until smooth.
  • Gradually add the self-rising flour, stirring gently to combine. Avoid overmixing.
  • Fold in the chopped pecans, ensuring they are evenly distributed throughout the batter.
  • Pour the batter into the prepared baking pan and spread it evenly.
  • Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  • Let the bread cool in the pan for 15 minutes before slicing. Serve warm or at room temperature.

Notes

For extra flavor, toast the pecans before adding them to the batter. You can also substitute some of the pecans with walnuts or almonds for a twist!
