Classic Cinnamon-Sugar Snickerdoodle Cookies
Ingredients:
1 cup butter, softened
1-1/2 cups white sugar
2 large eggs
2-3/4 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons cream of tartar
1/4 teaspoon salt
2 tablespoons white sugar
2 teaspoons ground cinnamon
Directions:
Preheat oven to 400°F (200°C).
In a large bowl, cream together butter and 1-1/2 cups sugar until smooth. Beat in eggs one at a time, then stir in the flour, baking soda, cream of tartar, and salt until well blended.
In a small bowl, mix 2 tablespoons sugar and cinnamon.
Shape dough by rounded spoonfuls into balls. Roll each ball in the cinnamon-sugar mixture, ensuring an even coat.
Place cookies 2 inches apart on an ungreased baking sheet and bake for 8-10 minutes, or until edges are set but centers are soft. Allow to cool on baking sheets for 2 minutes before transferring to wire racks to cool completely.
