Zesty Lemon Snack Mix with a Sweet Crunch
Ingredients:
9 cups Rice Chex cereal
3 cups Corn Chex cereal
2 cups miniature pretzels
1/4 cup butter, melted
1/4 cup light corn syrup
1 tablespoon grated lemon zest
2 tablespoons lemon juice
3/4 cup powdered sugar
Directions:
In a large bowl, combine Rice Chex, Corn Chex, and pretzels.
In a small bowl, mix melted butter, corn syrup, lemon zest, and lemon juice until well combined.
Pour the lemon mixture over the cereal and pretzels, stirring to coat evenly.
Spread the coated mixture onto two baking sheets lined with parchment paper.
Bake at 250°F (120°C) for 15-20 minutes, stirring halfway through.
Remove from the oven and immediately dust with powdered sugar while warm, stirring to coat.
Allow the mix to cool completely before serving or storing in an airtight container.
