Spaghetti Carbonara
A quick and easy traditional Italian pasta dish made with eggs, cheese, pancetta, and pepper. Perfect for a weeknight dinner.
Ingredients
Pasta
- 300 grams Spaghetti
Sauce
- 150 grams Pancetta (Chopped into small pieces)
- 4 large Eggs (Use fresh eggs for best results)
- 100 grams Parmesan cheese (Grated)
- 50 grams Pecorino cheese (Grated)
- 1 teaspoon Black pepper (Freshly cracked)
Instructions
Preparation
- Bring a large pot of salted water to a boil.
- In a bowl, whisk together the eggs, Parmesan, and Pecorino cheese until well combined.
Cooking
- Cook the spaghetti according to the package instructions until al dente.
- In a pan over medium heat, cook the pancetta until crispy.
- Reserve some pasta water, then drain the spaghetti.
- Add the hot spaghetti to the pan with pancetta and remove from heat.
- Quickly mix in the egg and cheese mixture, adding pasta water as needed to create a creamy sauce.
- Season with black pepper.
Serving
- Serve immediately with extra cheese and black pepper on top.
Notes
For a creamier sauce, you can mix in a splash of heavy cream. Serve immediately for best results.
