A quick and easy traditional Italian pasta dish made with eggs, cheese, pancetta, and pepper. Perfect for a weeknight dinner.

Ingredients

Pasta

  • 300 grams Spaghetti

Sauce

  • 150 grams Pancetta (Chopped into small pieces)
  • 4 large Eggs (Use fresh eggs for best results)
  • 100 grams Parmesan cheese (Grated)
  • 50 grams Pecorino cheese (Grated)
  • 1 teaspoon Black pepper (Freshly cracked)

Instructions 

Preparation

  • Bring a large pot of salted water to a boil.
  • In a bowl, whisk together the eggs, Parmesan, and Pecorino cheese until well combined.

Cooking

  • Cook the spaghetti according to the package instructions until al dente.
  • In a pan over medium heat, cook the pancetta until crispy.
  • Reserve some pasta water, then drain the spaghetti.
  • Add the hot spaghetti to the pan with pancetta and remove from heat.
  • Quickly mix in the egg and cheese mixture, adding pasta water as needed to create a creamy sauce.
  • Season with black pepper.

Serving

  • Serve immediately with extra cheese and black pepper on top.

Notes

For a creamier sauce, you can mix in a splash of heavy cream. Serve immediately for best results.
